Swarm-caught bees, fall-harvested sweetness
Byrne's Hill honey is gathered by resilient colonies sourced from local swarms, never fed sugar water, and harvested just once each fall to preserve the complex flavors of our prairies and wildflowers.
Pure, natural, and limited
Each season, we invite swarms to settle into our hives and forage on the diverse ecosystem of the farm. We never supplement with sugar water, so the honey you taste is entirely the product of native blooms. We harvest in the fall, spinning in small batches and leaving plenty for the bees to winter with.
